Zapata County was formed from Webb and Starr counties, created on January 22, 1858, and organized on April 26, 1858. It was named in honor of Antonio Zapata, a pioneer stockman of the region and a supporter of the Republic of the Rio Grande. The county seat was Carrizo in 1858, and its name was later changed to Zapata.
