In the early days of California, this mill crushed olives in a large vessel with solid granite wheels weighing about 12,000 pounds. Workers pushed the crushed olives into burlap sacks placed over the gate, then pressed the oily juice from the sacks, leaving pulp and seeds. The olive oil was then separated and further refined.
