Built in 1857 by Seth Hays on the site of the first permanent building in Council Grove, erected in 1848, this structure succeeded the original log cabin that was also known as the Hays House. In continuous use as a restaurant, it also served for church services, court proceedings, and the printing of the town's first newspaper.
