The bakery was a stone and adobe building with a large oven measuring approximately 12 feet wide and 11 feet deep. The fort's baker, who was also a soldier, provided the daily bread ration for an average of 130 men. In 1860, Inspector General Joseph Mansfield reported that the baker was excellent and that his bread was of the highest quality.
