Constructed during the 1870s, the Malt House is the oldest existing building on the grounds. Built entirely of stone at a cost of $5,000, its first floor served as a dormitory for brewery employees, while the second and third floors were used for malting. Malting involves soaking cereal grains in water and allowing them to germinate, then drying the grain with hot air. During mashing, the enzymes developed in malting are needed to modify the grain's starches into sugars, which yeast uses during fermentation.
