Dairy cows are bred for their ability to produce milk from which dairy foods are made. There are seven major breeds of dairy cattle. Ayrshire cattle are rusty-red and white in color, were historically known for horns that could curve, and were brought to America around 1800 from the county of Ayr in Scotland. Guernsey cattle range from fawn to golden in color and were titled "Golden Guernsey" because of the rich golden color of their milk, which is due to high levels of beta carotene, a source of vitamin A, in the milk.
