First named Constancia in 1812, Uncle Sam was one of Louisiana's great sugar plantations. Its mansion and many side buildings were erected by owner Samuel P. A. Fagot between 1827 and 1843 and dominated this site until they were demolished during the move of the river levee in 1940.
