During the 18th century, ice cream was a rarity and a dish of the very wealthy because ice was difficult to obtain until the widespread use of ice harvesting and the insulated icehouse. As those practices spread, the number of confectioners selling ice cream increased, and ice cream parlors began appearing in major cities. By the mid-19th century, ice cream had become popular with the masses.
