In Blackfoot, Idaho, the Idaho Potato Museum occupies a former Oregon Short Line Railroad depot built in 1912–1913, linking the city’s agricultural, transportation, and potato history. Local residents and industry figures organized the project after Union Pacific donated the depot, despite early skepticism that a potato museum could succeed. A trial opening in 1988 drew about 2,000 visitors, and the attraction officially opened in 1989 with 5,000 visitors in its first year. Supported by growers, businesses, and local government, it grew to feature exhibits on potato history, notable industry contributions, and well-known items such as the world’s largest potato chip, becoming a distinctive symbol of Idaho’s identity.
