Around 1888, this cook wagon was originally owned by Paul Talbot and used on the Henry Dunphy Ranch, now the Salinas Land Co. Talbot used it from the turn of the century to 1920 while farming approximately 16,000 acres on the west side of the Salinas River from Pine Canyon to Greenfield, and the wagon followed harvester crews during the harvest season. The Smart brothers bought the wagon in the 1930s and used it into the 1940s. Under the direction of Tom Thwaits and Bob Hinzman, the Community Service Crew of Soledad Prison restored it with funds donated by the Odd Fellows Cookwagon, and it was donated by William Smart in memory of his brother Lester, with restoration support also credited to I.O.O.F. San Bernabe Lodge, No. 358, and Rebekah Lodge #174.
