Keystone College established its maple sugar operation in 2001 to advance responsible forest stewardship and provide hands-on educational opportunities for students and the community. Funded by Keystone College, private foundations, and community friends, the Sugar Shack is located within the Howard Jennings Nature Preserve on the college's 165-acre Woodlands campus, overlooking the athletics complex, with collection lines running from maple trees throughout the interpretive trails system. Each spring, Keystone offers an Introduction to Maple Sugaring Field Biology course, an Open House, and community-focused educational programs, through which hundreds have been introduced to small-scale maple sugar production and sugar bush management. The college uses a traditional method for small-scale maple syrup production, and its syrup is used to support educational, community, and college events rather than being sold.
