The Hale Family Sugar House was built by Charles Oviatt Hale at the beginning of the 20th century. By building it, Charles carried on the tradition of his grandfather Jonathan, who began maple sugaring in the early 19th century. During his lifetime, C.O. tapped nearly twenty acres of sugar maples and produced over 200 gallons of syrup in a good year. Today the Sugar House is equipped with a wood-burning parallel-flow evaporator that converts sap to syrup, and Hale Farm and Village uses it during the Maple Sugaring Program in February.
