Steam-powered machinery here removed juice from cane by mashing fresh-cut stalks between large rotating iron cylinders and collecting the juice in vats. The crushed cane, called bagasse, was piled and used with wood as fuel for the furnaces, and the juice was piped from here to the cooling kettles.
